Crispy Cod with Sticky Lemon Sauce

Ingredients:
Fish:
450g cod fillet
Salt and pepper
2 eggs (for egg wash)
100g corn flakes, crushed
1 garlic clove
Zest of 1 lemon
Sticky Lemon Sauce:
Juice of 3 lemons
Zest of 1 lemon
3 tablespoons zero-calorie maple syrup @slimfoodsonline
1 tablespoon light soy sauce
2 tablespoons corn flour, mixed with 2 tablespoons cold water
Instructions:
Preheat the oven to 200°C. Line a baking tray with parchment paper.
Pat the cod fillet dry with kitchen paper and season with salt and pepper.
In a shallow bowl, beat the eggs. In a blender, combine the corn flakes, garlic, lemon zest, and salt.
Dip the cod fillet first in the egg wash and then in the corn flakes mixture, pressing gently to adhere.
Place the cod on the prepared baking tray. Bake for 15-20 minutes.
While the cod is baking, prepare the sauce. In a small saucepan, combine the lemon juice, lemon zest, maple syrup, and soy sauce. Bring to a simmer and cook for a few minutes until slightly thickened. If the sauce is too thin, mix with the corn flour mixture and cook for another minute until thickened.
Serve the cod with the sticky lemon sauce drizzled on top.
