Oreo Protein Cheesecake Bites

These bite-sized treats take inspiration from the classic cookies and cream combo, but with a healthy twist! Packed with protein and boasting lower calories, they're a perfect sweet treat without derailing your goals.

Ingredients:
For the Crust:
⢠9 Oreo cookies (filling removed) - 45g
⢠15g Melted coconut oil
For the Filling:
⢠200g Light cream cheese
⢠150g 0% Greek yoghurt
⢠60g Vanilla or Cookies & Cream protein powder
⢠Slimfoods Zero-calorie maple syrup
For Decoration:
⢠15g Melted Biscoff spread
⢠6 Oreo cookie halves
Instructions:
1. Pulse the Oreo cookies (without filling) in a food processor until finely ground. Mix in melted coconut oil to form a crumbly mixture. Press the mixture evenly into the bottom of 6 small muffin tins or silicone moulds.
2. Using an electric mixer or using a wire whisk, beat together the cream cheese, Greek yoghurt, and protein powder until smooth. Add the no-calorie maple syrup to taste, blending again.
3. Divide the cheesecake filling evenly between the prepared moulds, filling them almost to the top. Smooth the surface and refrigerate for at least 4 hours, or overnight for best results.
4. Drizzle each chilled bite with melted Biscoff spread and top with an Oreo cookie half. Enjoy your delicious and protein-packed treat!
