Smokey BBQ Salmon With Fresh Vegetable Sauce

Ingredients:

Salmon fillets (2 pieces, each 150g)


Marinade:


  • Salt

  • Smoked paprika

  • Black pepper

  • Calorie-free Honey BBQ sauce @slimfoodsonline


Sauce:


  • Red bell pepper, diced (50g)

  • Green bell pepper, diced (50g)

  • Red onion, diced (50g)

  • Fresh parsley, chopped (2 tbsp)

  • Lime juice (2 tbsp)

  • Olive oil (1 tbsp)

Cooking instructions:


  1. In a bowl, mix the salt, smoked paprika, black pepper, and BBQ sauce. Evenly coat the salmon fillets with the marinade. Let the salmon marinate in the refrigerator for at least 30 minutes.

  2. While the salmon is marinating, combine the red and green bell peppers, red onion, chopped parsley, lime juice, and olive oil in a bowl.

  3. Preheat your grill to medium-high heat. Once heated, carefully place the salmon fillets on the grill, skin side down. Grill for 4-5 minutes per side or until the salmon is cooked through and flakes easily with a fork.

  4. Once the salmon is cooked, top with a generous amount of the salsa.
