Delicious Spicy Thai Noodles

Ingredients (1 serving):
For the sauce mix:
Ginger (aprrox. 3 cm grated)
Brown Sugar (1 tbsp)
Skinny Food Co. Sriracha hot sauce (1.5 tbsp)
Low sodium soy sauce (1/4 cup)
For the cooking:
Sesame Oil (1tbsp)
Garlic ( 2 cloves, diced)
Zucchini (2 medium size, chopped in half slices)
Mushrooms (6, sliced)
Chilli Flakes (1/2 tsp)
Slim Noodles (1 pack prepared according to pack instructions)
Peanuts or Cashew nuts (25g, roughly chopped)
Green Onions (four small stalks chopped or according to taste)
Coriander (a small batch, roughly chopped)
Cooking Instructions for spicy Thai Noodles:
Prepare the sauce mix and set aside.
In large pan or a wok add the sesame oil.
Add garlic and fry for less than a minute over medium heat. Add the zucchini and fry for another 1 minute.
Then, add the mushrooms and cook until nicely cooked,
soft and brown.
Add the chilli flakes and mix them together with the slim noodles. Then add the sauce mix you prepared earlier and cook for 2 minutes. Add the peanuts, green onion and the coriander, give them a good mix season with salt and pepper and enjoy!
Notes:
*for a higher protein you could add chicken or beef steak into your recipe.
To do that cook into your pan 200 grams of sliced chicken breast of beef steak of your choice with 1 tsp of olive oil and fry until properly cooked and set aside.
Mix it with the rest of the recipe before you add the sauce mix.
*This recipe is quite spicy. If you would prefer a mild version of it adjust the Sriracha Hot Sauce and the Chilli flakes to your tasting.
