Pasta alla Norma (Light Version)
In a pan with a little coconut oil, fry garlic, basil, tomato juice, salt, pepper.
Cut, boil & drain the eggplant and throw it in the pan with the remaining ingredients.
Then add the slim penne to the pan & Mix together with the vegetables.
Bake in the oven for 10 minutes.
An Italian delicacy on your plate!
